Reed switches can be used in conjunction with magnets on a rotating wheel to create a rotary encoder, that can be decoded using digital logic and quadrature decoding. A simpler but similar application is to use one switch and magnet to get a rough estimate for rotational velocity, by measuring the differences between edges of the switch signal. Be careful not to tip the bottle when you do this as some oil may spill out. You may have to pull really hard to get the top off--they really out them on good.
